Chicken Fajita Pasta

This recipe is very similar to the Cajun pasta recipe that I posted the other day but I had a few people ask me about this recipe, so I decided to share! Just like the Cajun pasta I made this with gluten free pasta and olive oil instead of butter. It is literally chicken fajitas and pasta combined. So. Freaking. Good.
And so simple. One day I’d like to try this with shrimp. I feel confident it would taste even better! You could even cheat and use your favorite packaged taco seasoning. This is also the perfect recipe for meal prep. And it will give the pasta and chicken time to soak up all those amazing flavors. 4 Chicken thighs
1 Package of Gluten free pasta
3 Tablespoons Olive Oil
½ Chopped Yellow onion
1 Chopped Red Bell Pepper
1 Chopped Green Bell Pepper
1 Clove of Garlic
3/4 Pint of Heavy Whipping Cream
1 ½ Tablespoons of Chili Powder
1 Tablespoon of Tony’s seasoning
1 ½ Teaspoons of Cumin
1 ½ Teaspoons Paprika
1 ½ Teaspoons Cayenne Pepper
Fat free cheddar cheese





Step-by-step instructions:
  1. Chop onion, bell peppers, and garlic.
  2. Heat 2 Tablespoons of olive oil in a large skillet.
  3. Cook pasta according to package directions
  4. Place onion, bell peppers, and garlic in skillet.
  5. Sautee for 3-4 minutes on low-medium heat stirring occasionally
  6. While sautéing, cut chicken into bite size pieces
  7. Place chicken in a bowl and season with 1 Tblspoon of chilipowder, ½ Tblspoon Tony’s seasoning, 1 tsp cumin, 1 tsp paprika, and 1 tsp of cayenne pepper
  8. Once the onion, bell pepper, and garlic have been sautéed for 3-4 minutes place the chicken in the skillet and turn heat up to medium
  9. Allow to cook until chicken is cooked thoroughly (5-10 minutes stirring occasionally)
  10.  Once chicken is cooked all the way pour whipping cream into the skillet
  11. Sprinkle the rest of your spices in with the whipping cream (1/2 Tblspoon chili powder, ½ Tblspoon Tony’s, ½ tsp cumin, ½ tsp paprika, and ½ tsp of cayenne pepper
  12. Bring to a boil and then let simmer for 1-2 minutes
  13. Place pasta in the skillet and stir all of the ingredients together
  14. Serve up and sprinkle with a little bit of cheddar cheese
  15. Eat and enjoy!
