I love me a big ole’ bowl of red beans & rice. In fact,
it warms my soul just thinking about it. But I usually don’t have the time to
spend all day cooking beans and if I’m being honest, I don’t really know how to
cook them. (I know… it’s probably easy). So, I decided that I would come up
with a way to make red beans & rice with all the flavor but without the
time. The secret…store bought beans in a can. You heard me. I bought canned red
beans at the store and started adding all kinds of ingredients. You’d never
know the difference! Throw them on top of some rice and you’ve got yourselves a
meal! Nothing like easy and delicious. And while I'm not an LSU fan (woo pig) these would be the perfect Louisiana dish for serving at a tailgate or watch party!
Ingredients:
3 cans of store-bought red beans
½ cup chopped bell pepper
½ cup chopped yellow onion
½ cup chopped celery
2 cloves of minced garlic
2 Tbls olive oil or 1 Tbls of butter
½ Link of Down-Home Sausage (can use your favorite sausage)
2 Tbls Cajun seasoning
1 cup of rice
Step-by-step Instructions:
- Cook rice according to package directions
- Chop bell pepper, onion, celery, and garlic
- Heat olive oil on medium heat in a large skillet or pot
- Throw bell pepper, onion, celery, and garlic into the skillet
- Cook until onion is almost translucent
- While vegetables are cooking cut your sausage into bite size pieces
- When the onion is almost translucent place sausage into the skillet
- Cook on medium-low heat until completely cooked through
- Once sausage is cooked pour three cans of beans and 2 Tbls of Cajun seasoning into the skillet or pot
- Mix all the ingredients together and bring to a boil then simmer for 10 minutes stirring occasionally
- Serve on top of a bed of rice
